Rich chocolate cake meets silky vanilla mousse in this show-stopping Black Tie Mousse Cake that captures all the decadent luxury of Olive Garden’s beloved dessert.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 cup cooled brewed coffee
  • ½ cup olive oil
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons vanilla extract
  • 8 ounces dark chocolate, chopped
  • 8 ounces cream cheese, softened
  • 1 ½ cups heavy cream
  • ¼ cup confectioners’ sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease two 9-inch round cake pans with butter, then dust with flour. Tap out any excess flour to prevent sticking.
  2. Combine all dry ingredients (flour, granulated sugar, cocoa powder, baking soda, and salt) in a large mixing bowl. Whisk thoroughly until no streaks remain and the mixture looks uniform.
  3. Mix the wet ingredients in a separate bowl—cooled brewed coffee, olive oil, apple cider vinegar, and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined and smooth.
  4. Divide the batter evenly between prepared pans and bake for 25-30 minutes, until a toothpick inserted in the center comes out clean. I always check at 25 minutes since ovens vary—the tops should spring back lightly when touched.
  5. Cool the cakes in their pans for exactly 10 minutes, then turn out onto wire racks to cool completely. This prevents the layers from breaking while ensuring they don’t stick to the pans.
  6. Melt the dark chocolate using a double boiler or microwave in 30-second intervals, stirring between each. Let cool slightly, then beat with softened cream cheese until completely smooth and creamy.
  7. Whip heavy cream with confectioners’ sugar and vanilla until stiff peaks form—this takes about 3-4 minutes with an electric mixer. Gently fold half the whipped cream into the chocolate-cream cheese mixture for the cheesecake layer.
  8. Assemble by placing one cake layer on your serving plate, spreading with the cheesecake mixture, then topping with the remaining whipped cream mousse. Add the second cake layer and finish with more mousse, smoothing the top with an offset spatula.

Notes

  • Cool coffee completely: Hot coffee will melt the other ingredients and create a lumpy batter—I always brew mine early and let it reach room temperature.
  • Melt chocolate gently: Use 30-second microwave intervals and stir between each to prevent seizing, which creates grainy texture instead of silky smoothness.
  • Room temperature cream cheese: Cold cream cheese creates lumps that won’t smooth out, ruining the velvety cheesecake layer that defines this dessert.
  • Don’t overwhip cream: Stop at stiff peaks—going further creates grainy, butter-like texture that won’t fold smoothly into the chocolate mixture.
  • Chill overnight for best results: The flavors meld beautifully and the layers set properly when given time, making slicing cleaner and taste more developed.
  • Use offset spatula for assembly: This tool makes spreading each layer evenly much easier and creates those professional-looking smooth sides that rival restaurant presentation.
