Nothing beats the heavenly aroma of fresh garlic bread wafting through the kitchen—and this irresistibly cheesy garlic herb swirl bread delivers all that comfort in just one bowl.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup plain yogurt
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup melted butter
  • 4 cloves fresh garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/4 cup olive oil
  • 8 ounces cheese slices

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 21x11x7cm loaf pan with butter, then line with parchment paper for easy removal.
  2. Prepare the herb swirl by combining fresh garlic, chopped rosemary, parsley, dried oregano, thyme, and olive oil in a small bowl until it forms a thick, spreadable paste.
  3. Whisk together flour, baking soda, and salt in a large mixing bowl, creating a well in the center for easy combining.
  4. Combine the wet ingredients by whisking yogurt, milk, eggs, and melted butter in a measuring cup until smooth and well blended.
  5. Mix the batter by pouring wet ingredients into the flour well and gently folding until just combined—I always stop as soon as I don’t see dry flour streaks to avoid tough bread.
  6. Layer the magic by spreading one-third of the batter in your prepared pan, dolloping half the herb mixture on top, adding half the cheese slices, then repeating these layers and finishing with remaining batter.
  7. Bake uncovered for 30 minutes until golden brown, then tent with foil and continue baking for 20 more minutes until a toothpick inserted in the center comes out with just a few moist crumbs.
  8. Cool in the pan for 5 minutes before transferring to a wire rack—I find this brief resting time prevents the bread from falling apart while still warm.

Notes

  • Room temperature matters: Let your eggs, yogurt, and milk sit out for 30 minutes before mixing—cold ingredients create lumpy batter and uneven texture.
  • Don’t overmix the magic: I fold the wet ingredients into the flour just until no dry streaks remain, which keeps the crumb tender and prevents dense, tough bread.
  • Make herb paste consistency: Your garlic-herb mixture should be thick enough to dollop without spreading immediately—add olive oil gradually until it holds its shape.
  • Layer strategically: Press cheese slices gently into each batter layer so they stay put during baking, creating those gorgeous melted pockets throughout the loaf.
  • Test doneness properly: A toothpick should come out with just a few moist crumbs clinging—completely clean means overbaked and dry bread.
  • Cool before slicing: Letting the bread rest for at least 10 minutes after cooling prevents crumbling and allows the cheese to set for cleaner cuts.
