Ingredients

  • 2 tablespoons cooking oil
  • 1 chopped onion
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 jalapeño, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cans cream of chicken soup
  • 1 can diced tomatoes with green chiles
  • 1 cup chicken broth
  • 3 cups shredded cooked chicken
  • 8-10 corn tortillas, torn
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 350°F and grease a 9×13-inch baking dish with cooking spray or butter.
  2. Heat oil in a large skillet over medium heat, then sauté the chopped onion, red bell pepper, yellow bell pepper, and jalapeño for 5-7 minutes until softened.
  3. Stir in the chili powder, cumin, salt, and black pepper, cooking for about 30 seconds until the spices become aromatic.
  4. Add both cans of soup, diced tomatoes with green chiles, and chicken broth to the skillet. Mix everything thoroughly until smooth.
  5. Fold in the shredded chicken until coated with the sauce mixture.
  6. Layer half of the torn tortilla pieces in your baking dish, followed by half of the chicken mixture, then 1/2 cup each of the cheddar and Monterey Jack cheeses. Repeat these layers once more, ending with the remaining cheeses on top.
  7. Cover tightly with foil and bake for 30 minutes, then remove the foil and continue baking for 15-20 minutes until the cheese is golden and bubbly. Let it rest before serving.
