Golden, flaky biscuits crown these homemade chicken pot pies, creating the ultimate comfort food experience. Each spoonful delivers tender chicken and colorful vegetables swimming in a velvety, herb-infused sauce—no fancy techniques required.

Ingredients

  • 2 cans flaky layers biscuits
  • 2 cans cream of chicken soup
  • 2 cans cooked chicken (or 2 cups fresh, cooked chicken, shredded)
  • 1 bag frozen mixed vegetables (thawed)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Give your frozen vegetables a quick check to ensure they’re fully thawed—I like to pat them with a paper towel to remove excess moisture.
  2. Combine the cream of chicken soup, shredded chicken, thawed vegetables, garlic powder, onion powder, dried thyme, salt, and pepper in a large mixing bowl. Stir until everything is evenly incorporated.
  3. Pour the chicken mixture into a 9×13-inch baking dish, spreading it into an even layer. The filling should look creamy but substantial—if it seems too thick, add 2-3 tablespoons of water or chicken broth.
  4. Open the cans of biscuits and separate them. Place them across the top of the filling, making sure they touch slightly so they’ll join together while baking.
  5. Bake in the preheated oven for 25-30 minutes, until the biscuits have puffed up and turned a beautiful golden brown. You’ll know it’s done when the filling bubbles around the edges.
  6. Remove from the oven and let stand for about 5 minutes before serving—this gives the filling a chance to set slightly so it won’t completely run when you scoop it out.
  7. Serve warm, making sure each portion includes both the flaky biscuit topping and the creamy chicken filling beneath.

Notes

  • Dry those veggies thoroughly: Pat thawed frozen vegetables with paper towels before mixing to prevent excess moisture.
  • Boost store-bought ingredients: Elevate canned cream of chicken soup by adding a splash of heavy cream for richer flavor.
  • Perfect biscuit placement: Arrange the biscuits so they touch slightly; they’ll join while baking to create a golden crust.
  • Check your oven temperature: If your oven runs hot, loosely cover with foil if biscuits brown too quickly.
  • Rest before serving: Allow the pot pie to stand for 5 minutes after baking for easier serving.
