Rich, restaurant-quality salmon gets a luxurious makeover with this creamy pesto creation that transforms ordinary weeknight cooking into something extraordinary.

Ingredients

  • 2 teaspoons olive oil
  • 4 (6 oz) skinless salmon filets
  • Kosher salt and ground pepper, to taste
  • 2 garlic cloves, minced
  • 2/3 cup almond milk
  • 3 ounces cream cheese
  • 1/4 cup homemade pesto sauce
  • Fresh basil, to garnish
  • 1 lemon, cut into wedges

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat until it shimmers but doesn’t smoke. Pat the salmon filets completely dry and season both sides generously with kosher salt and ground pepper.
  2. Sear the salmon filets in the hot oil for 4-5 minutes per side until golden brown and cooked through (internal temperature should reach 145°F). The edges should look opaque and the fish should flake easily with a fork.
  3. Remove the salmon to a plate and tent with foil to keep warm. Don’t worry if the pan looks a bit messy—those browned bits will add incredible flavor to your sauce.
  4. Reduce the heat to medium and add the minced garlic to the same skillet. Sauté for about 30 seconds until fragrant—I like to pull it off the heat just as it starts to turn golden to avoid any bitterness.
  5. Pour in the almond milk and add the cream cheese, whisking constantly as the cream cheese melts and incorporates. The mixture will look lumpy at first, but keep whisking until completely smooth.
  6. Stir in the pesto sauce and let the mixture simmer gently for 2-3 minutes until it thickens slightly. The sauce should coat the back of a spoon and have a beautiful pale green color.
  7. Return the salmon filets to the skillet, spooning the creamy pesto sauce over each piece. Let everything heat through for 1-2 minutes—the sauce will continue to thicken around the fish.
  8. Garnish with fresh basil leaves and serve immediately with lemon wedges for squeezing over each portion. I always taste and add a pinch more salt if needed before plating.

Notes

  • Dry salmon thoroughly: Pat filets completely dry with paper towels before seasoning—excess moisture prevents proper browning and creates steam instead of that golden crust we’re after.
  • Room temperature cream cheese: Let cream cheese sit out for 15-20 minutes before cooking so it melts smoothly into the almond milk without leaving lumps in your sauce.
  • Watch the garlic timing: I sauté minced garlic for just 30 seconds until fragrant, then immediately add the almond milk to prevent it from burning and turning bitter.
  • Don’t rush the sauce: Whisk constantly when combining almond milk and cream cheese—the mixture looks lumpy at first but becomes silky smooth with patience and continuous stirring.
  • Taste before serving: Since pesto brands vary in saltiness, I always do a final taste test and adjust seasoning just before plating the salmon.
  • Save those pan bits: Those browned bits left after searing the salmon add incredible depth to your creamy sauce—they’re liquid gold for flavor development.
