Ingredients
1 cup cherry tomatoes
1 bell pepper, diced
1 red onion, chopped
2 cloves garlic, minced
8 ounces block feta cheese
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
4 cups fresh spinach
4 large eggs
Instructions
Preheat your oven to 400°F (200°C).
Prepare your baking dishes by dividing the tomatoes, bell pepper, red onion, garlic, and feta evenly among four 10-ounce oven-safe ramekins.
Drizzle each ramekin with olive oil, making sure to coat the vegetables and feta generously.
Combine oregano, salt, thyme, black pepper, and red pepper flakes in a small bowl, then sprinkle the seasoning mixture evenly over each ramekin.
Bake for 25 minutes until the feta begins to soften and the vegetables start to caramelize.
Remove from oven and gently stir each ramekin to combine the melted feta with the roasted vegetables.
Create small wells in each ramekin using the back of a spoon, then carefully crack one egg into each well.
Return to oven and bake for an additional 8-12 minutes until egg whites are completely set but yolks remain slightly runny.
