Ingredients
2 cups potatoes, cubed
2 cups carrots, sliced
2 cups zucchini, chopped
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup and to prevent sticking.
Prepare the vegetables by cutting potatoes into 1-inch cubes, slicing carrots into ½-inch rounds, and chopping zucchini into 1½-inch pieces.
Combine all vegetables in a large mixing bowl, then drizzle with olive oil and add minced garlic, dried thyme, dried rosemary, salt, and pepper. Toss thoroughly until every piece is evenly coated with the herb mixture.
Spread the seasoned vegetables in a single layer across the prepared baking sheet, ensuring they aren’t overcrowded.
Roast for 15 minutes, then remove from oven and stir the vegetables.
Return to the oven for another 10-15 minutes until the potatoes are fork-tender and everything has developed a gorgeous golden-brown exterior.
Transfer the roasted vegetables to a serving dish and garnish with freshly chopped parsley.
Notes
Cut potatoes and carrots into similar-sized pieces, but make zucchini chunks slightly larger.
Ensure vegetables aren’t touching on the baking sheet to promote caramelization.
Preheat your baking sheet for an immediate sear that enhances browning.
Use a thin metal spatula to stir vegetables halfway through roasting.
Toss minced garlic with oil first to prevent burning.
If browning too quickly, lower oven temperature to 375°F.
