Succulent shrimp bathed in a luscious garlic butter sauce creates a dinner that’s both impressive and surprisingly simple to prepare. This Garlicky Shrimp Delight transforms everyday ingredients into a restaurant-worthy meal, with tender seafood swimming in a velvety Parmesan cream sauce that’s punctuated by just the right amount of heat.

Ingredients

  • 1 pound Large shrimp
  • 1 cup Long-grain white rice
  • 4 cloves Garlic
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese
  • 1/4 cup Fresh parsley
  • 1 Lemon
  • 2 cups Chicken broth
  • 3 tablespoons Butter
  • 1 teaspoon Red pepper flakes
  • 2 tablespoons Olive oil

Instructions

  1. Combine chicken broth and water in a medium saucepan and bring to a boil. Add rice, salt, butter, and lemon zest, then reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender and liquid is absorbed.
  2. While the rice cooks, heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Add shrimp in a single layer and cook for 2 minutes per side until just pink.
  3. Transfer shrimp to a plate and reduce heat to medium. Add the remaining butter to the skillet, then add minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant but not browned.
  4. Pour in the heavy cream and bring to a gentle simmer, scraping up any flavorful bits from the bottom of the pan. Allow the sauce to reduce slightly for 2-3 minutes until it begins to thicken.
  5. Stir in the Parmesan cheese until fully melted and incorporated. The sauce should coat the back of a spoon.
  6. Return the shrimp to the skillet and toss to coat in the sauce. Stir in fresh lemon juice and half the chopped parsley, then remove from heat.
  7. Fluff the rice with a fork and fold in the remaining fresh parsley. Serve the garlicky shrimp over the herb rice, spooning extra sauce on top.
  8. For the perfect finishing touch, garnish with additional parsley, lemon wedges, and a light drizzle of high-quality olive oil.

Notes

  • Watch shrimp cooking time: I never cook shrimp fully in the first step—they continue cooking when returned to the sauce.
  • Prep all ingredients first for best results.
  • Control your heat when adding garlic to avoid burning.
  • Balance the acidity by adding lemon juice gradually.
  • Reserve some pasta water to adjust sauce consistency if needed.
