Ingredients

  • 1/2 cup greek yogurt
  • juice of 1 lemon
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp each dried oregano + thyme
  • 1/2 tsp sea salt
  • 2 lb boneless skinless chicken thighs or chicken tenders
  • 1/4 cup shredded cucumber
  • 1/2 cup greek yogurt
  • 2 tbsp lemon juice
  • 1 tsp olive oil
  • 1 clove garlic, minced
  • 2 tbsp fresh dill
  • sea salt to taste

Instructions

  1. Prepare the chicken marinade by mixing Greek yogurt, lemon juice, olive oil, minced garlic, dried oregano, thyme, and sea salt in a large bowl until smooth and well combined.
  2. Add the chicken thighs to the marinade, turning to coat completely. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more intense flavor.
  3. While the chicken marinates, make the tzatziki by grating the cucumber and squeezing out excess moisture using a clean kitchen towel or paper towels.
  4. Combine the drained cucumber with Greek yogurt, lemon juice, olive oil, minced garlic, fresh dill, and salt in a small bowl. Stir thoroughly and refrigerate until ready to serve.
  5. Heat a grill pan or skillet over medium-high heat. Remove chicken from marinade and cook for 5-7 minutes per side.
  6. Let the cooked chicken rest for 5 minutes before slicing into thin strips.
  7. Warm pita bread by placing directly over a gas flame for 10 seconds per side, or wrapping in foil and heating in a 350°F oven for 5 minutes.
  8. Assemble your gyros by spreading tzatziki on warm pita, then layering with sliced chicken and your favorite toppings.

Notes

  • Drain cucumber thoroughly to prevent watery tzatziki.
  • Choose thighs over breast for juiciness.
  • Don’t rush the marinade for the best flavor.
  • Heat pitas properly to avoid cracking.
  • Balance garlic based on serving time.
