Ingredients
2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
1 cup powdered sugar
2 tablespoons lemon juice
1 teaspoon lemon zest, for garnish
Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. This prevents sticking and makes cleanup a breeze.
Whisk together the flour, baking powder, and salt in a medium bowl.
Beat the softened butter and granulated sugar in a large bowl using an electric mixer on medium-high speed for 3-4 minutes, until light and fluffy.
Add the eggs one at a time, beating well after each addition, then mix in the lemon zest, lemon juice, and vanilla extract until combined.
Gradually add the dry ingredients to the wet mixture on low speed until just combined.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 12-15 minutes until the edges are just turning golden but the centers still look soft.
For the glaze, whisk together the powdered sugar and lemon juice in a small bowl until smooth, then drizzle over completely cooled cookies and sprinkle with lemon zest.
Notes
Room temperature ingredients: Ensure butter, eggs, and lemon juice are at room temperature.
Perfect zest technique: Use only the bright yellow outer layer of the lemon when zesting.
Don’t rush the creaming: Beat the butter and sugar for the full 3-4 minutes.
Precise baking time: Watch closely during the final minutes of baking.
Glaze consistency matters: Adjust thickness by adding powdered sugar or lemon juice in tiny increments.
Layered lemon flavor: Add the fresh lemon zest in two stages.
