Buttery salmon meets the golden sweetness of maple syrup in this restaurant-quality dish that transforms dinner into something truly special.

Ingredients

  • 4 salmon fillets, skin on or skinless
  • 1 teaspoon garlic powder
  • Kosher salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon olive oil, or avocado oil
  • 2/3 cup pecans, chopped
  • 1/3 cup maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard

Instructions

  1. Season the salmon fillets generously with garlic powder, kosher salt, and pepper on both sides. Let them rest at room temperature for about 5 minutes while you prepare the glaze ingredients.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until it shimmers. The pan should be hot enough that the oil moves freely but isn’t smoking.
  3. Sear the salmon fillets skin-side up (if using skin-on) for 4-5 minutes without moving them. You’ll know they’re ready to flip when the edges start to turn opaque and they release easily from the pan.
  4. Flip the salmon carefully and cook for another 3-4 minutes until the internal temperature reaches 145°F. I like to check the thickest part with an instant-read thermometer to ensure perfect doneness.
  5. Remove the salmon to a serving platter and tent loosely with foil. Don’t worry about keeping it warm—the hot glaze will reheat it perfectly.
  6. Reduce the heat to medium and add the glaze oil to the same skillet. Toast the chopped pecans for 1-2 minutes, stirring constantly until they’re fragrant and lightly golden.
  7. Whisk together the maple syrup, apple cider vinegar, and Dijon mustard directly in the skillet with the pecans. Let it bubble gently for 30-45 seconds until it thickens slightly and coats the back of a spoon.
  8. Drizzle the warm glaze over the salmon fillets immediately and serve. The glaze will continue to thicken as it cools, creating that beautiful glossy finish.

Notes

  • Let salmon come to room temperature before cooking.
  • Don’t move the fish while searing.
  • Toast pecans first for added flavor.
  • Use pure maple syrup for the best taste.
  • Whisk glaze ingredients in the hot skillet for the best texture.
  • Serve immediately while the glaze is warm.
