This three-cheese macaroni masterpiece transforms humble pasta into the ultimate comfort food experience with creamy Velveeta, sharp cheddar, and smooth Monterey Jack.

Ingredients

  • 16 ounces elbow macaroni
  • 3 tablespoons butter or margarine
  • 1 ½ cups milk, divided
  • 2 large eggs, lightly beaten
  • 1 lb (16 ounces) Velveeta cheese, cubed (1/2 inch size)
  • 8 ounces shredded Kraft Mild Cheddar Cheese, divided
  • 8 ounces shredded Kraft Monterrey Jack Cheese
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 350°F and lightly grease a 9×13-inch baking dish.
  2. Bring a large pot of water to a rolling boil, add a tablespoon of salt, and cook the elbow macaroni until just al dente (about 6-7 minutes).
  3. Drain the macaroni well and transfer to a large mixing bowl. Immediately add the butter and stir until completely melted.
  4. In a separate bowl, whisk together 1 cup of the milk with the beaten eggs until well combined, then pour over the macaroni and stir to incorporate.
  5. Add the cubed Velveeta, 1½ cups of the shredded cheddar, and all of the Monterey Jack cheese to the pasta, folding gently until the cheeses are distributed throughout.
  6. Stir in the remaining ½ cup milk, salt, and pepper.
  7. Transfer the mixture to your prepared baking dish and sprinkle the remaining ½ cup of cheddar cheese evenly over the top.
  8. Bake uncovered for 30-35 minutes until the edges are bubbling and the top is beautifully golden.
  9. Let stand for 5-10 minutes before serving.

Notes

  • Perfect your pasta timing: Cook the elbow macaroni 1-2 minutes less than package directions.
  • Cube Velveeta properly to ensure it melts evenly throughout the macaroni.
  • Add cheese while hot for a creamier texture.
  • Let your milk, eggs, and cheeses come to room temperature before mixing.
  • The resting period after baking is important for consistency.
  • Shred your own cheese for smoother sauce.
