Chewy peanut butter oat bites packed with mini M&Ms and chocolate chips create the perfect sweet-tooth solution without ever turning on the oven.

Ingredients

  • 1½ cups quick oats
  • ½ cup creamy peanut butter
  • ⅓ cup honey
  • ¼ cup mini M&Ms
  • ¼ cup white chocolate chips
  • ¼ cup chocolate chips
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Combine 1½ cups quick oats, ½ cup creamy peanut butter, and ⅓ cup honey in a large mixing bowl. Stir vigorously until the mixture begins to come together and the oats are fully coated.
  2. Add ¼ cup mini M&Ms, ¼ cup white chocolate chips, ¼ cup chocolate chips, 1 teaspoon vanilla extract, and a pinch of salt to the bowl. Fold everything together until the add-ins are evenly distributed throughout the mixture.
  3. Test the consistency by squeezing a small amount in your palm – the mixture should hold together easily. If it seems too dry, add an extra tablespoon of peanut butter; if too sticky, add a few more oats.
  4. Line a baking sheet with parchment paper. Using clean hands, scoop about 1½ tablespoons of mixture and roll between your palms to form a ball.
  5. Place each formed ball on the parchment-lined baking sheet, spacing them slightly apart. The recipe should yield about 12 cookie balls, depending on your preferred size.
  6. Transfer the baking sheet to the refrigerator and chill for at least 30 minutes.
  7. Once chilled, transfer to an airtight container for storage or serve immediately.

Notes

  • Sticky hands solution: Spray your hands lightly with non-stick cooking spray before rolling the balls.
  • Perfect consistency test: The mixture should hold together when pressed but not feel overly wet.
  • Cookie scoop advantage: Use a small cookie scoop first, then roll between your palms to perfect the shape.
  • Chill for success: 30 minutes minimum sets the texture, but extending to an hour makes them even more flavorful.
  • Mix-in timing matters: Add M&Ms and chocolate chips last with minimal stirring to prevent bleeding.
