These irresistible no-bake Preacher Cookies transform simple pantry ingredients into decadent treats in just minutes.

Ingredients

  • 3 cups quick-cooking oatmeal, uncooked
  • 2 cups sugar
  • 1 stick (1/2 cup) unsalted butter
  • ⅛ teaspoon salt
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • ½ cup milk chocolate chips
  • 1 Tablespoon butter

Instructions

  1. Prepare your workspace by lining a baking sheet with wax paper or parchment paper. This gives your cookies a non-stick surface to cool on.
  2. Combine the sugar, milk, salt, and butter (the 1/2 cup/1 stick) in a medium saucepan over medium heat. Stir until the butter is completely melted and the mixture is well combined.
  3. Bring the mixture to a full rolling boil and maintain it for exactly one minute. I like to use a timer here as timing is crucial—too short and your cookies won’t set, too long and they’ll be crumbly.
  4. Remove from heat and immediately stir in the vanilla extract and peanut butter until smooth and completely incorporated.
  5. Add the oatmeal to the mixture and stir vigorously until every oat is coated. The mixture will begin to thicken quickly, so work fast!
  6. Melt the chocolate chips and tablespoon of butter in the microwave in 20-second intervals, stirring between each until smooth. Then swirl this into your oat mixture for a marbled effect.
  7. Drop spoonfuls of the warm mixture onto your prepared baking sheet. You can use a cookie scoop or two spoons to form cookies about 2 inches in diameter.
  8. Allow the cookies to cool and set completely at room temperature, which usually takes about 30 minutes. If your kitchen is warm, you can speed things up by placing them in the refrigerator for 15 minutes.

Notes

  • Master the boil time: Exactly one minute of full boiling is crucial—I set a timer every time.
  • Room temperature peanut butter: Using peanut butter straight from the pantry (not refrigerated) incorporates more smoothly into the hot sugar mixture for perfect texture.
  • Work quickly after cooking: Once your mixture is off the heat, you have about 3-5 minutes before it starts setting. Have your oats measured and ready to go!
  • Humidity matters: On particularly humid days, you might need to refrigerate these no-bake Preacher cookies to help them set properly.
  • Customize the finish: For uniform cookies, flatten slightly with the back of a spoon while still warm. For rustic cookies with more texture, leave the dropped spoonfuls as is.
