This soul-warming vegetable lentil soup combines earthy lentils with vibrant mixed vegetables for a protein-packed meal that nourishes from the inside out. The aromatic blend of herbs infuses the broth as garlic and onion create a flavorful foundation, while chickpeas add hearty texture and extra protein.

Ingredients

  • 4 cups vegetable broth
  • 2 cups mixed vegetables
  • 1 cup lentils
  • 1 cup chickpeas
  • 2 cups fresh spinach
  • 3 cloves garlic
  • 1 medium onion
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste black pepper
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat, then add the diced onion and sauté for 3-4 minutes until translucent and beginning to soften.
  2. Add the minced garlic to the pot and cook for another 30-45 seconds until fragrant. Stir constantly during this step to prevent the garlic from burning.
  3. Stir in the mixed vegetables and cook for 2-3 minutes, allowing them to begin softening and releasing their flavors into the oil.
  4. Add the rinsed lentils, drained chickpeas, dried thyme, and dried oregano to the pot, stirring to coat everything in the aromatic oil mixture.
  5. Pour in the vegetable broth, then season with salt and black pepper. Bring to a boil, then reduce heat to maintain a gentle simmer.
  6. Cover and simmer for about 20-25 minutes, until the lentils are tender but still hold their shape.
  7. Stir in the chopped fresh spinach and cook for 2-3 additional minutes until wilted.
  8. Remove from heat and stir in the optional lemon juice if using. Taste and adjust seasonings as needed before serving piping hot in bowls.

Notes

  • Rinse lentils thoroughly under cold running water to remove any dust or debris.
  • Sauté onion until truly translucent to develop essential sweetness.
  • Add salt in stages for more complex flavor.
  • Watch lentil texture, as different varieties cook at different rates.
  • Add spinach just before serving to preserve color and nutrients.
  • Use lemon juice to enhance flavor and reduce sodium.
