- 1 pound ground beef
- 1 (10 oz) can Rotel tomatoes, undrained
- 1 packet taco seasoning
- 1/2 cup onion, chopped
- 12 taco shells
- 1 cup shredded cheddar cheese
- 1 cup lettuce, shredded
- 1 cup tomatoes, diced
- Sour cream, for serving
- Salsa, for serving
- Brown the ground beef in a large skillet over medium-high heat for about 7 minutes, breaking it apart with a wooden spoon until no pink remains.
- Add the chopped onion to the beef and cook for an additional 3 minutes until the onions become translucent and slightly soft.
- Pour the undrained can of Rotel tomatoes into the skillet and stir to combine.
- Sprinkle the taco seasoning evenly over the mixture and stir thoroughly. Reduce heat to medium-low and let simmer for 5 minutes.
- Warm the taco shells in a 350°F oven for 3-5 minutes until they’re crisp but not browned.
- Spoon the hot Rotel beef mixture into each warmed taco shell, filling them about two-thirds full.
- Top each taco with a generous pinch of shredded cheddar cheese, shredded lettuce, and diced tomatoes.
- Serve immediately with sour cream and salsa on the side.
Notes
- Drain the beef, not the Rotel: Allow the cooked ground beef to drain for 1-2 minutes before adding Rotel tomatoes.
- Perfect your shell game: Stand taco shells in a muffin tin during warming to keep them upright.
- Cheese timing matters: Add half your shredded cheese to the hot meat mixture in the last minute of cooking.
- Balance the heat: Stir 2 tablespoons of sour cream directly into the meat mixture for a milder flavor.
- Prep for seconds: Keep the taco shells and meat mixture separate until serving.
