This rich and aromatic Keema Aloo curry transforms humble ingredients into pure comfort on a plate. Ground beef and tender potatoes simmer in a fragrant sauce infused with garam masala, cumin, and warming spices—creating that perfect balance of hearty and satisfying.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 finely chopped onion
  • 3 cloves minced garlic
  • 1 inch minced ginger
  • 1 pound ground beef
  • 1 can (14 ounces) diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon garam masala
  • 2 large cubed potatoes
  • 1 teaspoon salt
  • 1 cup water
  • 1/4 cup freshly chopped cilantro

Instructions

  1. Heat vegetable oil in a large, deep skillet or Dutch oven over medium heat, then add finely chopped onions and sauté for 5-7 minutes until they turn a rich golden brown.
  2. Add minced garlic and ginger to the golden onions and sauté for 1-2 minutes until fragrance develops.
  3. Incorporate the ground beef, cooking until browned and no longer pink, about 7 minutes.
  4. Stir in diced tomatoes and ground spices, cooking for about 5 minutes until aromatic.
  5. Add cubed potatoes, salt, and water, stirring thoroughly.
  6. Cover the pan and reduce heat to low, simmering gently for about 20 minutes until potatoes are fork-tender.
  7. Taste and adjust seasoning with salt or spices as needed.
  8. Garnish with freshly chopped cilantro before serving.

Notes

  • Brown, don’t rush: Take the full 5-7 minutes to caramelize your onions until truly golden brown.
  • Potato perfection: Cut potatoes into uniform 1/2-inch cubes.
  • Spice blooming matters: Allow spices to cook for full 5 minutes with tomatoes and beef.
  • Sauce consistency trick: The sauce should coat the back of a spoon.
  • Rest before serving: Let curry stand covered for 5 minutes after cooking.
  • Freezer-friendly meal prep: Portion and freeze for longer storage.
