These Walnut Maple Roasted Sweet Potatoes transform an everyday root vegetable into holiday magic on a plate, with caramelized edges, a buttery cinnamon glaze, and crunchy walnuts.

Ingredients

  • 4 medium sweet potatoes
  • 1/4 cup unsalted butter, melted
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup walnuts, chopped
  • 1/2 cup pure maple syrup
  • fresh thyme leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper. Peel the sweet potatoes and slice them into ½-inch thick rounds.
  2. Combine the melted butter, brown sugar, cinnamon, and a pinch of salt in a large bowl, whisking until smooth. Add the sweet potato rounds, tossing gently until coated.
  3. Arrange the sweet potato rounds in a single layer on the baking sheet, leaving space between each piece.
  4. Roast for 25 minutes, then carefully flip each piece and continue roasting for another 10 minutes until caramelized and tender.
  5. While roasting, chop the walnuts and prepare the maple syrup.
  6. Remove from the oven, sprinkle walnuts over the sweet potatoes, and drizzle with maple syrup.
  7. Return to the oven for 10-15 minutes, watching carefully to prevent burning.
  8. Transfer to a serving dish, garnish with thyme, and serve warm.

Notes

  • For extra richness, dot with cold butter before serving.
  • Uniform slicing matters for even cooking.
  • Toast walnuts separately for better flavor control.
  • Use pure maple syrup for the best taste.
  • Allow the dish to rest for 5 minutes before serving.
